I had given up on healthy baking. After I was duped into the ‘healthy chocolate cheesecake brownie’ avocado disaster, which tasted like avocado and gravel, I decided baking was one thing that shouldn’t be tampered with. If you need a sugar fix, there is no substitute. You can’t trick me, I’m a seasoned professional. Get me a toffee crisp. Covered in salted caramel. Deep fried.
However, yesterday, when faced with a desperate sugar craving but an equally desperate desire to not walk outside in the storm to the shops, I had an idea. With an enormous amount of ingredients left over from the first failed ‘healthy’ attempt, I experimented. And BINGO, I discovered this super quick, incredibly gooey tasty treat. They’re not gonna be one of your five a day but better than using a shed load of sugar. It’s vegan friendly too if you’re that way inclined. Enjoy…
Ingredients
25g Cacao Powder
60 ml Maple syrup
60ml Coconut Oil
1 Tbsp all natural nut butter
1/4 tsp Sea salt to taste (I was quite liberal with this)
Method
Scoop/pour the coconut oil, maple syrup and nut butter into a pan over a low/medium heat. Sift the cacao powder into the mix. Once melted and mixed in together, remove from heat
Serve up into little dollops onto baking paper or if a little neater, scoop into cake cups/case
Wait to cool or refrigerate, then eat as many as possible!
I made a lot more than these but I smashed them all too quickly. My cravings know no bounds.

It’s pretty hard to dress these up. Who cares, just eat. SO GOOD.
